Cross Validated is a wiki-like Q&A site for statistics. Look over their Books tag for a lot of people asking for introductory reading.

John Goldsmith wrote a nice introductory tutorial titled Probability for Linguists

Kevin Knight wrote a very gentle introduction to Bayesian methods for NLP
